Guest Review: A Michelin Standard Sausage That Has Raised the Bar in Thailand

I’ve eaten countless sausages over the years, both in the UK and across Thailand, so I don’t hand out praise lightly. When I came across Chef’s Sausage, I was hopeful rather than convinced. After working my way through their Sicilian, Cumberland, Classic Breakfast Sausages, Italian Sausage, Garlic Sausage, bacon and premium pork products, I can honestly say these are among the finest artisan sausages I have ever cooked at home.

What immediately impressed me was the flavour. Every variety has its own distinct personality, yet they all share the same qualities – excellent texture, natural seasoning and quality meat that speaks for itself. There is no sense that you’re eating an over-processed supermarket sausage. Instead, every bite tastes like it has been crafted by someone who genuinely understands food.

That shouldn’t come as a surprise. Chef’s Sausage was founded by Chef Luca, an Italian Michelin-trained chef with more than 18 years of experience working in Michelin-recognised restaurants and five-star hotels around the world. His goal was refreshingly simple: create additive-free sausages using premium cuts of meat, authentic recipes and traditional European techniques. Every batch is made by hand using natural casings, with no fillers, no MSG and no unnecessary additives. Rather than producing on an industrial scale, the company makes small batches where quality comes before quantity.

One of the secrets is the careful selection of ingredients. Chef’s Sausage uses premium cuts of pork shoulder, hip and back fat to create the perfect balance between zest and juiciness. The natural hog casings provide that satisfying “snap” when you bite into them, something any good sausage lover will immediately appreciate. Their bacon is equally impressive, dry-cured before being slowly smoked over real wood, producing an authentic taste that is difficult to find in Thailand.

I deliberately kept my meals simple because I didn’t want rich sauces or complicated recipes to overpower the main attraction. Great sausages deserve to be the star of the plate, and these certainly are.

Over the course of a couple of weeks, I found myself creating a variety of simple, comforting meals that allowed each sausage to showcase its own personality. One evening I paired them with creamy mashed potato, baked beans and rich homemade gravy; another with buttery mashed potato and tender cauliflower; on another occasion they sat alongside crispy roast potatoes, broccoli and roasted peppers. Even a simple sausage roll with mustard and ketchup became something rather special because the quality of the sausage completely elevated what is often considered a quick snack.

My favourite meal, however, was wonderfully uncomplicated. The Garlic Sausage was served in a rich tomato and butter bean cassoulet, allowing the garlic and herbs to gently infuse the tomato sauce while the sausage remained beautifully juicy with that satisfying natural casing snap. It was one of those dishes where every mouthful made me slow down and appreciate just how much subtle seasoning had been packed into a single sausage.

Although every variety was excellent, my overall favourite was undoubtedly the Cumberland. Richly seasoned without becoming overpowering, it had the perfect balance of herbs and cracked black pepper, reminding me of the very best butcher’s sausages back home in Britain. The meat remained wonderfully succulent while the seasoning complemented rather than dominated the pork. It is quite simply one of the finest Cumberland sausages I have eaten anywhere.

The Sicilian Sausage was another standout. Inspired by authentic Sicilian recipes, it contains Caciocavallo cheese, a traditional Southern Italian cheese that melts gently into the pork as it cooks, adding an incredibly creamy richness and subtle tang. Combined with carefully selected herbs and seasoning, it delivers an unmistakably regional flavour that transports you straight to Sicily.

The Italian Sausage delivered exactly what I expected from a Michelin-trained Italian chef, authentic seasoning, beautifully balanced fennel and herbs, and a depth of quality that worked equally well on its own or incorporated into pasta dishes. The Classic Breakfast Sausages were everything a traditional breakfast sausage should be: succulent, meaty and perfectly seasoned, while the bacon crisped beautifully, delivering that authentic smoky essence that is surprisingly difficult to find in Thailand.

The quality extends beyond the food itself. My order arrived exceptionally well packaged in insulated frozen transport, exactly as promised, with every product in perfect condition and ready for the freezer. The company delivers throughout Thailand using temperature-controlled frozen logistics, making premium artisan sausages available whether you live in Pattaya, Bangkok, Chiang Mai or elsewhere in the Kingdom. I wasn’t the only one left impressed. Customer reviews repeatedly praise both the flavour and the service. Others say that the Italian sausage has an authentic spice blend, while many mention returning for repeat orders because the quality is consistently outstanding.

If you’re someone who enjoys proper artisan food made with care rather than mass-produced convenience, Chef’s Sausage deserves a place on your shopping list. For me, they’re restaurant-quality products that allow anyone to enjoy Michelin-inspired craftsmanship at home.
